Thoughts

With finances being so tight in planning for our move, I have been struggling with my diet. My plan is to just do my best until after my move when I can get back at it again.

I did allow my mind to wander last night and to dream of my perfect food day. What kind of foods would leave me happy and satisfied. I wasn't to think about diet, just my ideal food day. It was actually very simple:

Breakfast:

oatmeal with raisins and topped with applesauce

or

tofu scramble (yummy!)

Lunch:

Soup of some kind

or

A nice big salad with lots of stuff on it (I like warm and cold mixed together so adding some roasted mushrooms, onions and corn as well as some beans of some kind would be perfect)

Supper:

A nice stirfry with fresh veggies and brown rice or rice noodles

or

Thin Pasta and sauce

Snack:

A fruit smoothie

For the most part, this would actually be an extremely healthy way of eating. I find it interesting that given no money issues, I would be happier with a diet as healthy as this one.

Maybe when I move, I can try to get there.

Not sure the last time you went to the McDougall boards, but in Jeff's forum he has some threads about SNAP recipes. SNAP being an acronym for simple, nutrious, afforable plan. There are so many variations and you can make them for under 4 bucks a day per person. I think he even has it down to about 3, but you could probably make it cheaper by removing the boil in bags rice and just make a bunch and have it ready, which ends up being faster than the 10 min boil and eat rice:O)
Good luck with your move. Moving sucks, no matter how much you look forward to a new place.
